The Cooking Array // Lemon Garlic Dressing

I recently purchased my ticket to Maui. Thanks to Mikey, for proposing to Nicole, all of our closest friends get to spend a whole week adventuring, surfing, eating pineapples, laying on the beach and everything else you do in Hawaii!

So what have I been doing to get my bikini body, you ask? Well, I've been eating salad of course. Okay, well maybe not all day every day, but a good amount. Salads can get a little boring, so I like to spice mine up a bit by adding some avo, sweet potatoes, artichoke hearts, cucumbers, etc... BUT, the thing that ties everything together is the dressing. If you're trying to eat healthy by eating a salad, you don't want to ruin it by adding a greasy, heavy dressing. You want something light and savory that you can enjoy and still feel good about. So I'll stop talking and just give you my secret; or should I say my mom's amazing secret.

It's quick and simple!

Lemon Garlic Dressing

Ingredients
-2 Lemons
-1 clove of garlic, finely minced
-1/2 cup of Olive Oil
-1 tsp. of Dijon Mustard
-Pinch of salt
-Pinch of pepper

Directions
In a bowl, add the finely minced garlic, squeeze the juice of two lemons, and whisk in Olive Oil and Dijon. Add a pinch of salt and pepper to taste and pour over your salad bowl.
